Day 5 – Devilled Beef with mini baked potatoes and steamed vegetables

Ok, I admit, this recipe doesn’t ‘Look’ particularly appealing, but trust me, it tastes great! Another Slow Cooker recipe that is simply mix, pour, and cook. This recipe is originally from the cookbook ‘Slow Cooker’ by Sally Wise. I would normally choose to serve this dish with Mashed potato, but out of sympathy for my son (who really struggles with mashed spuds), I opted to serve it with mini baked potatoes instead.
- 1 kg blade steak or gravy beef, diced
- 1/2 cup tomato sauce
- 2 tablespoons vinegar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon brown sugar
- 2 teaspoons wholegrain mustard
- 2 teaspoons lemon juice
- 1 1/2 teaspoons salt
- 3 teaspoons cornflour
- 1 kg (4 large) potatoes
- Olive Oil
- 2 carrots
- 1/2 zucchini
- 200g frozen peas
Remove all visible fat from the beef and dice. Mix together the tomato sauce, vinegar, Worcestershire sauce, brown sugar, mustard, lemon juice, and salt. Pour 3 tablespoons of the mixture over the base of the slow cooker and place the beef on top. Pour the remaining liquid over the beef. (Please note: my meat was frozen, which is why it looks like a big lump)
Place lid on the cooker and cook for 4-5 hours on High or 8-9 hours on Low.
If you still have lots of liquid left at the end of cooking, and you want to thicken it, mix the cornflour with 1/4 cup water into a paste and then add to the slow cooker. Cook for a further 5-10 minutes until sauce thickens.
Serve with mini baked potatoes and steamed vegetables.
Mini Baked Potatoes
Dice potatoes into approximately 3-4cm chunks
Place in a bowl and coat with oil and salt
Arrange in a single row in a baking dish
Pour ½ cup water AROUND the potatoes (not over the top)
Bake in moderate oven 30-40 minutes until tender
The kids can mix all the wet ingredients in a jug and then pour it into the slow cooker.

As you can see, my daughter struggled with her dinner this night. But she did manage to get through over half.
