Day 11 – Sausage and apple casserole with mashed potato and vegetables

A tasty and quick recipe for using sausages. I really enjoy the sweetness that the apples and cranberry sauce add to this recipe. Much better than any packet mix!
Serves 5
Ingredients
Casserole
- 8-10 sausages
- 1 tablespoon olive oil
- 1 onion (thinly sliced)
- 2 granny smith apples (peeled and diced)
- 1 cup beef stock
- 1 tablespoon cornflour
- 2 tablespoons cranberry sauce
- 2 tablespoons wholegrain mustard
Mashed Potato Ingredients
- 600g – 700g potatoes
- ½-1 teaspoon salt
- 1 tablespoon butter
- 2 tablespoons milk
Vegetables to serve
- 1 x med/lge carrot
- ½ zucchini
- 250g frozen peas
Method
Casserole
Heat oil in a frypan. Cook sausages until browned. Note: you may want to cut sausages into smaller pieces once they are cooked. Sprinkle over onion and apples and cook for a further 3-5 minutes. Combine water, beef stock powder, cranberry sauce, mustard, and cornflour and pour over sausages. Stir until sauce is heated through and thickened.
Serve with mashed potato and steamed vegetables.
Mashed Potato
In the meantime, peel and dice potatoes. Boil until tender. Mash with a potato masher and then add butter, milk and salt. Whisk with a fork until smooth.

Because most of this is done over the stove, there may not be a real lot the kiddies can help with
