Day 6 – Salmon Quiche with Salad

My mother-in-law passed this little gem on to me! A great recipe for when you need to put together a last minute meal. A classic one bowl meal that the kids will love.
Ingredients
Quiche
- 1 tin Salmon
- 1 cup grated cheese
- 1 ½ cups milk
- ¼ cup melted butter
- 3 eggs
- ½ cup Self Raising Flour
Salad and Dressing
- lettuce
- 1 x tomato
- 2 x carrots
- cucumber
- 2 x sticks of celery
- ½ cup milk
- 1 teaspoon white vinegar
- ¼ cup sour cream
- 1 large tablespoon mayonnaise
- 1 ½ tablespoons tomato sauce
- 1 1/2 teaspoons cranberry sauce
- Pinch salt
Method
Quiche
Whisk eggs in a bowl. Add milk, butter and flour and stir to combine (the mixture may look lumpy). Pour mixture into a greased pie dish, then sprinkle over the salmon and cheese.
Bake in a moderate oven for 40-45 minutes or until golden and cooked in the middle. Serve with salad.
Salad Dressing Method (similar to Thousand Island Dressing)
Combine milk and vinegar in small jug. Add sour cream and mayonnaise. Mix well, then add tomato sauce, cranberry sauce and salt. Mix well and refrigerate for at least 15 minutes before drizzling over salad.
Variations
Use Tuna instead of Salmon

Let the kids mix the wet ingredients and then help sprinkle over the fish and cheese
