Day 8 – Marinated Roast Beef (in the slow cooker)

This is generally a Sunday tradition for us. I place the roast into the slow cooker 8-12 hours before I need it, and the meat is always beautifully tender. The marinade in this recipe just adds that little extra flavour. We will be using leftovers from this roast in tomorrows recipe!Serves 5
Ingredients
Roast
- 2 kg Blade roast (or similar) – this will be used for todays and tomorrow recipes
- ¼ cup tomato sauce
- 1 tablespoon wholegrain mustard
- 2 tablespoons Worcestershire sauce
- ½ cup water
- 2 tablespoons corn flour (optional)
Roast Potatoes
- 800g-1kg potatoes (depending how many pieces you serve with a roast)
- olive oil
- salt
- ¾ cup water
Vegetables to serve
- 2 x carrots
- 200g beans
- 125g frozen peas
- 125g frozen corn kernels
Method
Roast
Place roast in a slow cooker. Combine tomato sauce, mustard, and worcestershire sauce in a small jug or bowl. Mix well and then spread all over the roast. Pour ½ cup water around base of the roast and cook on low for 8 hours on medium.
Once cooked, reserve 1/3 of the roast for use in tomorrows recipe. Serve with gravy, roast potatoes and steamed vegies
Roast Potatoes
Peel and cut the potatoes into large chunks (3-4 chunks per large potato . Place in a pot of water and bring to the boil. Boil for approximately 5 minutes then drain immediately. Coat with oil and salt. Arrange in a single layer in a baking dish, and pour ¾ cup water around the base of the potatoes.
Bake in moderate oven for approximately 1 ½ hours or until done to your liking.
Gravy
Ok, so this one came across some debate in my household. Personally, I thought it was ok (a little bland perhaps compared to packet stuff), however, perfectly suitable if you didn’t have any instant mix in the cupboard. Husband wasn’t at all impressed, and the kids loved it. So, in summary, you can try this gravy if things get desperate – or add a couple of dollars to the shopping bill and purchase some instant mix gravy to have with your roast.
Scoop out approx. 1 cup of the juices from the slow cooker and place in a small saucepan. Put on the stove and bring to the boil. Meanwhile mix cornflour with ½ cup water. Pour this mix into the juices, stirring continuously until thickened and boiling.

Freezer
You can freeze roast meat, however, I think it is better not frozen
