Day 12 – Honey soy chicken burgers (marinade originally from bestrecipes.com.au)

A great Friday or Saturday night meal when you just want something quick and easy. Use this marinade for other chicken dishes, or try making wraps instead.
- 2-3 chicken breasts cut into 2-3 portions
- 1 clove garlic
- 1/3 cup soy sauce
- 2 tablespoons lemon juice
- 2 tablespoons honey
(Amount of the following will largely depend on how many burgers you will be making)
- 1 x tomato
After cutting the chicken breasts into portions, give them a pound with a meat mallet (to help flatten them out a little).
Mix soy sauce, crushed garlic, lemon juice, and honey together in a bowl. Place chicken in the marinade, cover and refrigerate for a couple of hours.
Butter one side of each bread slice. Place each slice butter side down in a hot fry pan until lightly browned/toasted. Set aside and layer with cheese.
Cook chicken pieces over medium heat until cooked through. Place chicken on top of the cheese and then top with tomato, lettuce, and a second slice of bread.
Add whatever salad you like – try cucumber, grated carrot, beetroot etc.
Not suitable for freezing

As you can see, my daughter wasn’t as keen as this as her brother. However, she did manage to eat half of it.
