I have tried to cook Hedgehogs many times, but for some reason, mine never end up cooking in the ’round balls’ they are meant to be. Once cooked, they also come out falling apart, or in this case, all joined together. It still tasted great, just didn’t look quite right. Maybe someone can help me solve my Hedgehog dilema?Serves 5


  • 425g can tomato soup
  • ½ cup diced tomatoes
  • 1 large onion
  • 1 egg
  • ½ cup fresh breadcrumbs
  • 700g mince
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons soy sauce
  • 3 teaspoons chutney or cranberry sauce
  • 1 teaspoon salt
  • 2/3 cup long grain rice
  • 250g beans
  • 2 x carrots
  • 125g frozen peas
  • 125g frozen corn
  • 800g potatoes peeled and diced
  • oil
  • salt extra



Pour soup into a slow cooker. Add 2 ¼ cups of water and the tomato and stir to combine. Turn the cooker setting to High while preparing the meatballs.

Peel and grate the onion. Whisk the egg until well broken up. Combine all with the remaining ingredients. Roll into walnut-size balls and drop into the soup mixture. Make sure the liquid covers all the meatballs.

Place lid on the cooker and cook for 4 hours on High or 7-8 hours on Low. Serve with steamed vegetables and mini baked potatoes (see https://www.duesoon.com.au/slow-cookerdevilled-beef/ for mini baked potato instructions)

Kids Help

If you don’t mind the kids getting ‘meaty’ hands, you could let them help you roll the meatballs.
