This is a bit of a made up recipe. I love pasta, and tried experimenting with the ingredients to find a pasta bake that would work. This turned out great. Serves 5

  • 2-3 Chicken Breasts
  • 1 x 500g packet pasta spirals
  • 1 tablespoon butter
  • 1 onion
  • 1 ¼ cups water
  • 1 teaspoon chicken stock powder
  • 1 tablespoon plain flour
  • 1 cup cream
  • 1 tablespoon wholegrain mustard
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • corn kernels (optional)
  • salt to taste
  • 1 cup grated cheese

Cook pasta according to packet directions

Melt butter in frypan or saucepan, add onion and chicken and cook until chicken is lightly browned. Mix 1 cup of the water with the chicken stock powder, and add to the pan. Mix remaining ¼ cup water with the flour and add to chicken. Stir until it heats through and thickens. Add cream, mustards, corn, and honey, and mix through. Add chicken mixture to the cooked and drained pasta. Mix through and place in a casserole dish. Sprinkle over cheese and then bake in a moderate oven until browned on top.

Serve with salad or steamed vegetables.

Confession: I had intended to serve this dish with some salad and the honey mustard dressing made in the ‘Roast Chicken, salad, and potato bake’ recipe. However, when I made this, it was a hot day and I really didn’t feel like doing any more than I had too, so we ended up eating it by itself  (the ingredients for a salad to serve with this recipe are included in the master shopping list).

Try adding mushrooms or other vegetables to the chicken mixture.

Kids Help

There is not a real lot the kids can do with this recipe, since it nearly all involves cooking over the hot stove. However, they could always sprinkle the cheese on top of the casserole.

This recipe is suitable to freeze, however, I personally don’t think it’s ideal.
