I used to use a jar sauce when I wanted to make this meal. However, after finding this recipe, I will never use a bought sauce again. Alter the amount of honey according to your taste preferences 🙂

Serves 5

Ingredients

  • Approx. 2 cups of rice
  • 1 tablespoon olive oil
  • 6 chicken thigh fillets (diced)
  • 150g – 200g button mushrooms
  • 1 medium onion, diced
  • 1 ½ cups water
  • 1 teaspoon chicken stock powder
  • 1 tablespoon wholegrain mustard
  • 2 tablespoons honey
  • 1 tablespoon cornflour
  • approx. 200g green beans (ends trimmed and cut in half)
  • 1/3 cup sour cream

Method

Cook rice according to packet directions. The amount you cook will depend on how much each person usually eats.

Heat oil in large frypan or saucepan. Cook the chicken pieces until golden and then remove from pan.

Add mushrooms, onion, and beans to the pan along with ½ cup water. Simmer for 5 minutes until the vegetables have softened. Meanwhile, mix remaining water, stock powder, mustard, honey, and cornflour in a small jug. Add to the pan with the chicken and bring to the boil, stirring constantly while the sauce thickens. Stir through the sour cream and serve with rice.

Variations

Try adding/subtracting certain vegetables. I have added carrot and corn kernels in the past

 

Kids Help

Since most of this is done over the hot stove, there is not a lot the kids can help with. Perhaps they could set the table 🙂

 

Freezer

If there is any left over, this recipe is suitable to freeze – or reheat it for lunch the next day YUM!
