Day 2 – Creamy Chicken and Corn Pie

This hearty chicken pie is easy, tasty, and always loved by the kids. A great way to use up leftover BBQ chicken, or simply use chicken pieces instead. Very versatile – try adding different veggies, herbs, or even some curry.
Serves 5
Ingredients
- 1 whole cooked chicken (cooked in yesterday’s Roast Chicken recipe)
- 2 cups water
- 1 ½ teaspoons massel chicken stock powder
- 2 tablespoons plain flour
- 1/3 cup cream
- 200g frozen corn kernels
- 2 x sheets puff pastry
- Salt
- Olive oil
- 1 kg (4 large) potatoes
- 2 carrots
- 250g green beans
- 200g frozen peas
Method
Chicken Pie
Remove flesh from the chicken and set aside
Place chicken stock in 1 ½ cups of water and stir
Pour into large saucepan and bring to the boil. Meanwhile, mix the Plain Flour with the remaining ½ cup water. Once the stock is boiling, add the flour/water mix, and stir constantly until boiling and thickened
Add cream and stir until combined
Add chicken and corn and stir until combined. Add salt to taste.
Remove from heat and allow to cool (if it is too hot when placed in the pie shell, you will end up with a soggy base)
While the pie filling is cooling, grease a pie plate and cover base and sides with one sheet of pastry. Fill with filling, then cover with remaining pastry sheet.
Bake in moderate to hot oven for 40-50 minutes or until pastry is golden
Serve with the baked potatoes and steamed veggies
Mini Baked Potatoes
Dice potatoes into approximately 3-4cm chunks
Place in a bowl and coat with oil and salt
Arrange in a single row in a baking dish
Pour ½ cup water AROUND the potatoes (not over the top)
Bake in moderate oven 30-40 minutes until tender
Variations
Chicken Pie is so versatile, it really is only limited by your imagination. This is a very basic recipe (and may be considered too bland by some people), so if you want to make it a little more interesting try adding other vegetables, curry powder, or mustard for a little extra flavour. You can also use Filo Pastry instead of Puff.
Kids Help
There are always pastry off cuts when a pie is made. Let the kids make a smiley face on the pie with these offcuts, or they could cut out shapes with cookie cutters to stick on top.
Freezer
This pie is suitable to freeze. Simply cover tightly with alfoil or place in an airtight container. Reheat covered in the oven from frozen (this can take awhile)

As you can see, my daughter struggled to eat her veggies this night – however, all the pie is gone!
