BONUS Recipe – Caramel Self Saucing Pudding
Being the sweet tooth that I am, I couldn’t post 14 main meals without also adding at least one dessert. I modified a chocolate self saucing pudding, so that it will also work with the ingredients from our master shopping list. This recipe is quick to put together, and has plenty of yummy sauce once cooked!
- 60g butter
- 1/2 cup milk
- 1 cup Self Raising flour
- 2/3 cup brown sugar
- 2 cups hot water
- 3/4 cup brown sugar extra
Heat butter and milk in a saucepan, stir until butter melts.
Sift dry ingredients into basin, add butter mixture to well in the centre, stir until smooth, pour into deep, greased 1 litre ovenproof dish. Evenly sprinkle over extra brown sugar over the top, and then carefully pour over the hot water. Bake in moderate oven for 40-45 minutes.
Serve with cream and/or ice cream!
