Day 9 – Beef Pie with Potato Bake and Vegies

A simple and versatile recipe for using up leftover roast meat.

Serves 5

Ingredients

Beef Pie

  • Leftover beef from yesterdays roast. Diced (or approx 600g – 1kg steak)
  • 1 tablespoon butter
  • 100g mushrooms
  • 1 onion finely chopped
  • 2 cups water
  • 1 ½ teaspoons massel beef stock powder
  • 2 tablespoons Worcestershire sauce
  • 1 1/2 – 2 tablespoons of flour
  • 2 sheets puff pastry

Potato Bake

  • 4 medium potatoes
  • 2/3 cup milk
  • 1 cup cream
  • 1 cup grated cheese
  • ½ tsp salt

Vegetables to serve 

  • 2 x carrots diced
  • half zucchini diced
  • 125g frozen peas
  • 125g frozen corn kernels

Method

Beef Pie 

Melt butter in frypan or saucepan. Add onion and cook until softened. Add 1 ½ cups water, beef stock powder, Worcestershire sauce, and mushrooms. Bring to the boil and simmer for approximately 2 minutes, or until mushrooms are softened. Meanwhile, mix flour with remaining ½ cup water. Slowly stir into the gravy mix and simmer until thickened. Add chopped beef and mix through. Allow to cool.

While the pie filling is cooling, grease a pie plate and cover base and sides with one sheet of pastry. Fill with filling, then cover with remaining pastry sheet.

Bake in moderate to hot oven for 40-50 minutes or until pastry is golden

Serve with the potato bake and steamed vegetables

Potato Bake

Peel and wash potatoes. Slice thinly and arrange in a greased casserole dish. Mix the milk, cream, and salt in a small jug. Pour over the potato bake and then sprinkle with cheese. Cover with alfoil and bake in a moderate oven for 45 minutes. Remove alfoil and bake for a further 15 minutes so the top can brown.

Variations

Again, Pie’s are so versatile, you can add or subtract almost anything. So long as you have a gravy base to start with, you can go with whatever takes your taste buds fancy! Try this pie with leftover corned silverside instead.

Kids help

There are always pastry off cuts when a pie is made. Let the kids make a smiley face on the pie with these offcuts, or they could cut out shapes with cookie cutters to stick on top.

If able, let the kids arrange the sliced potatoes in the dish, mix the milk and cream in the jug, pour it over the potatoes and then sprinkle the cheese.
